Here is red cabbage, (Brassica oleracea Capitata Group) also known as purple cabbage or blue kraut. A 0.5 mm diameter pencil lead is shown on the left for scale. The color is due to anthocyanins. Its juice can be used as a pH tester: red in acid, and green/yellow in basic.
